I'm looking to use puff pastry as the crust. But the main thing is, I need to use my cupcake tins, NOT mini muffin tins.

Mini Quiches

Ingredients:

* 1 pkg. refrigerated pie crust
* 1 large portabello mushroom
* 8 oz. button mushrooms
* 2 Tbsp. butter
* 1 Tbsp. olive oil
* 1/2 cup whipping cream
* 1 egg
* 1/4 tsp. salt
* 1/8 tsp. cayenne pepper
* 1 cup shredded Swiss cheese

This little quiches are wonderful served as appetizers at a holiday party. You can make them ahead of time and freeze them; they reheat beautifully.
Prep Time: 25 minutes
Cook Time: 20 minutes
Ingredients:

* 1 pkg. refrigerated pie crust
* 1 large portabello mushroom
* 8 oz. button mushrooms
* 2 Tbsp. butter
* 1 Tbsp. olive oil
* 1/2 cup whipping cream
* 1 egg
* 1/4 tsp. salt
* 1/8 tsp. cayenne pepper
* 1 cup shredded Swiss cheese

Preparation:
Let pie crusts stand at room temperature for 20 minutes, then gently roll out to 12" circles. Wipe mushrooms with damp cloth and chop in food processor or with chef's knife. Place butter and olive oil in a medium skillet and cook mushrooms over medium heat until all liquid is evaporated and mushrooms are brown and tender.

Preheat oven to 375 degrees. Grease 2 dozen 1 3/4" muffin cups. Using 3" cookie cutter, cut 24 circles from pie crust (12 from each crust), rerolling crusts if needed. Press into prepared muffin cups. Divide mushrooms evenly among lined cups. In small bowl, combine egg, cream, salt and cayenne pepper and beat well. Pour egg mixture over mushrooms; 2 tsp. per each muffin cup. Sprinkle each with grated cheese.

Bake at 375 degrees for 18-20 minutes or until center of quiches is set. To serve warm, cool 5 minutes before removing from pans.

To freeze, cool on wire rack and freeze in single layer until solid. Place in air tight freezer container in single layer.

To reheat, place frozen quiches on cookie sheet and bake at 350 degrees for 12-14 minutes until hot. Makes 24.

My Grandmother has started baking fruitcakes and we are looking for cake tins to send them to our relatives. Can anyone tell me where to buy them either in a store or online?

I think it is 6 or 12 because of some King long ago who killed any baker that skimped and left only 11 Duncan donuts Hence "the bakers dozen at 13"

I came across some old fluted tart tins, about 4" in diameter and 1" deep.

They were screaming "make me into something" at the garage sale where I found them. I have about 30 of them.

But what? Any ideas?

Wow... I see what you mean. Those tins are lovely, and every time I see them I have to resist the urge to buy them. And you have 30! Oi!

Some ideas:

-A windchime? (I'm assuming you mean the metal tins, here. Ceramic ones wouldn't work so well for chimes.) Hang several from chain or cord (punching holes in them with an awl), and hang the chain from a piece of wood or similar.

-Picture frames? Generally these tins have a flat bit on the bottom, yes? Cut small pictures to fit this flat bit, add a piece of string glued to the back for hanging, voila! Tart tin frame! (This would be really funny if you had, say, pictures of all your friends dressed as "tarts"...)

-Could they be soldered or glued together, open-sides-up, to make a sort of candy/nut dish? Like the ones you can buy that are segmented, so your walnuts don't mix with the pecans? :) Similarily, could you fix them edge-to-edge, open-sides-down, and group them nicely as wall art?

-Mini shrines? (go to www.craftychica.com. She has all the info on shrines!)

-Could you put two together-- so that the open, cup-like sides were together-- and punch holes in them to make small lanterns? I think filling them with water and freezing it first would probably work well. Then glue or solder them together, wedging a christmas light inside.

I'm sure you'll come up with something great. I wish I had better (or at least more coherant) ideas for you, but it's been a long morning and I still haven't breakfasted (and now you've got me wanting tarts!).

My husband loves those little pecan pies that are individually sold in aluminum pie tins. I want to buy from the company, if possible. Does anyone know the name of the company who produces these?

How much needs to be in the tins? Should I fill all the way up or just a little bit at the bottom?
